  • 2 large red peppers
  • 4 spring onions
  • 200 ml (7fl oz) coconut milk
  • 2 tbsp crunchy peanut butter
  • 1 x 5 cm piece of root ginger
  • 2 cloves of garlic
  • 1 red chilli
  • 1 bunch of coriander
  • 1 tsp allergy-friendly stock powder
  • 2 tsp soft light brown sugar
  • 1 good pinch of sea salt
  • 2 tbsp warm water
  • 1 tsp toasted sesame oil
