  • 3 poblano chiles
  • 3/4 pound boneless pork loin, trimmed of fat and cut into 1 1/2-inch cubes
  • 1 1/2 teaspoons achiote paste
  • 2 medium onions, finely chopped
  • 3 cloves garlic, smashed and peeled
  • 1 1/2 teaspoons ground cumin
  • 1 bay leaf
  • 1/4 cup apple-cider vinegar
  • 3 1/2 cups homemade chicken stock, or canned low-sodium chicken broth, skimmed of fat
  • olive-oil cooking spray
