  • 3 cups cooked chicken, torn or shredded pieces
  • juice from one big fresh lime
  • sea salt and ground pepper, or lemon pepper
  • olive oil, as needed
  • 8 corn tortillas
  • 1 cup chopped pineapple
  • 1 4-oz. can chopped green chiles
  • 1 1/2 cups shredded cheddar cheese
  • hot red pepper flakes, to taste
