  • 6 very ripe hachiya persimmons
  • 3 large eggs, lightly beaten
  • 1 1/2 c whole milk
  • 1 t vanilla extract
  • 6 t melted butter, slightly cooled
  • 2 t honey
  • 1 c sugar
  • 1 1/4 cg all-purpose flour
  • 1/2 t kosher salt
  • 1 t baking soda
  • 1 t baking powder
  • 1 1/2 c coursely chopped toasted walnuts
  • 2 c whipped cream (optional)
