Ingredients

  • all-purpose flour, for dusting
  • 1/2 recipe pate brisee to make one double-crust or two single-crust pies
  • 6 large eggs
  • 1 1/4 cups light corn syrup
  • 1 1/4 cups packed dark-brown sugar
  • 5 tablespoons unsalted butter, melted and cooled
  • 1 tablespoon pure vanilla extract
  • 2 teaspoons fresh lemon juice
  • 1/4 teaspoon salt
  • 2 1/2 cups coarsely chopped toasted pecans (about 10 ounces), for filling
  • 2 cups pecan halves (about 8 ounces), lightly toasted, for topping
  • whipped cream, for serving
