  • 1 bell pepper, thinly sliced
  • 4 baby bok choy
  • 2 carrots, shaved with a vegetable peeler
  • half a cucumber, sliced on a bias
  • 4 scallions, halved length wise
  • sesame oil
  • cilantro for garnish
  • 1/3 cup pickled ginger
  • 1/2 cup peanut butter
  • 1/2 cup light coconut milk
  • 1/2 cup water
  • 1 tbsp. tamari/soy sauce
  • 1 tsp. red pepper flakes
  • 2 tsp. lime juice
  • 2 tbsp. agave
  • 1 shallot, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 tsp. canola/peanut oil
