  • 8 sli thick cut bacon, sliced crosswise into 1/4-inch strips
  • 1 t unsalted butter, plus more as needed
  • 1⁄4 c chicken broth, plus more as needed
  • mint leaves, both torn and whole to taste
  • very good olive oil for drizzling
