  • 1/2 cup full-bodied red wine
  • one 1-pound 12-ounce can peeled whole san marzano tomatoes
  • 3 cups cold water, swirled in the emptied out tomato can
  • 2 cups all-purpose flour
  • 3 eggs
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon kosher salt
  • rice flour for dusting
  • 1 cup heavy cream
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/2 cup pasta cooking water
  • grated parmesan cheese, optional garnish
