  • 1 oz. (2 tbs.) unsalted butter, softened
  • 1 tbs. pure vanilla extract
  • pinch kosher salt
  • 3 cups granulated sugar
  • 1-1/2 cups egg whites (about 10 large), preferably pasteurized, at room temperature
