Ingredients

  • 2 tbsp nut-free vegetable oil
  • 1 tbsp tomato puree
  • 4 large pieces of shin of veal (ossi bucchi), each at least 2 in (5 cm) thick
  • salt and freshly ground black pepper
  • 2 carrots, very finely chopped
  • grated zest of 1 lemon
  • 1 celery heart, very finely chopped
  • 2 tbsp finely chopped fresh parsley
  • 8 1/2 fl oz (250 ml) very dry white wine
  • 1 garlic clove, finely chopped
  • 14 oz (400 g) tomatoes, skinned and chopped (or 14 oz / 400 g can of chopped tomatoes)
