  • 4 tsp. cornstarch
  • 4 tsp. fresh lemon juice
  • 4 large ripe peaches, each about 6 oz., peeled and cut into 1/2-inch dice
  • 6 tbs. firmly packed light brown sugar
  • pinch of salt
  • 1/2 tsp. vanilla extract
  • 2 sheets frozen puff pastry, each 9 1/2 inches square, thawed but chilled
  • 1 egg, lightly beaten with 1 tsp. water
