  • 1 tablespoon extra virgin olive oil
  • 1 shallot, minced (about 1/3 cup)
  • 1/4 teaspoon chili flakes
  • 1/2 teaspoon grated fresh ginger
  • 1/2 teaspoon ground coriander
  • pinch cloves
  • 1/3 cup lightly packed brown sugar (1/4 cup if using meyer lemons)
  • 1/4 cup red wine vinegar
  • 2 tablespoons fresh lemon juice
  • 1/4 cup dried unsweetened cherries or raisins, roughly chopped
