Ingredients

  • 2 pounds boneless beef chuck roast, trimmed of excess fat
  • 4 poblano peppers (sometimes labeled pasilla in the grocery store)
  • 1 serrano chile
  • 2 tablespoons vegetable oil
  • kosher salt
  • freshly ground black pepper
  • 1 medium yellow onion, sliced (not thinly, but not too thick)
  • 1 clove garlic, minced
  • 1/2 cup red wine
  • 14.5 ounces canned diced tomatoes (preferably fire roasted)
  • 1 tablespoon fresh oregano, chopped
  • corn or flour tortillas
  • tomatoes, chopped
  • mexican crema (you can also use sour cream thinned out with fresh lime juice)
