  • 8 heirloom tomatoes sliced ½ inch thick
  • 1 red onion sliced ¼ thick
  • sea salt
  • fresh cracked pepper
  • extra virgin olive oil
  • 1 fresh cayenne pepper or red jalapeño
  • ½ cup kalamata olives
  • ½ of a lemon + extra peel
  • 2 cloves garlic
  • 4 oz feta cheese (french, sheep’s milk if you can find it)
  • 2 tablespoons red wine vinegar
  • 1 sprig fresh oregano
  • ½ cup oats
  • 1 egg
