Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, diced small
  • 2 tablespoons tomato paste
  • 1 1/2 pounds ground beef chuck (10 percent fat)
  • 1 cup roughly crushed saltine crackers (about 15 crackers)
  • 1 cup coarsely grated sharp cheddar (3 ounces)
  • 3 large eggs
  • 1 tablespoon plus 2 teaspoons prepared horseradish
  • 1 tablespoon worcestershire sauce
  • 1/2 teaspoon coarse salt
  • 1/4 teaspoon ground pepper
  • toasted country-style bread, lettuce, sliced dill pickles, and ketchup, for serving
