  • 1/3 cup dry sherry (real sherry, not cooking sherry from the supermarket)
  • 1 lb carrots
  • 3 onions sliced thickly
  • 1/4 tsp each oregano, thyme, dried mustard, rosemary
  • 2 bayleaves
  • 3 cloves garlic, minced
  • 1 tbsp oil for browning
