  • 1 medium shallot, minced (about 1/4 cup)
  • 3 medium cloves garlic, minced (about 1 tablespoon)
  • 1/2 teaspoon sambal paste (or another chile sauce such as sriracha)
  • 1 cup white wine
  • 2 pounds manila clams
  • kosher salt and freshly ground black pepper
