Ingredients

  • 1 1/2 c unsalted butter, room temperature
  • 1 1/2 c sugar
  • 3 large eggs
  • 1 egg yolk
  • 2 t vanilla extract
  • 1/4 c dark rum
  • 1/2 c pureed mango
  • 3 c all-purpose flour
  • 2 t baking powder
  • 1/2 t baking soda
  • 1/8 t salt
  • 1 c sour cream
  • 2 mangoes, chopped into chunks
  • 2 egg whites
  • ½ c sugar
  • 2 t pureed mango + extra mango as desired
