  • 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature, cut into 1/2-inch pieces
  • 1/2 cup plus 1 tablespoon superfine sugar
  • 1 large egg, at room temperature, lightly beaten
  • 1/2 cup or so raspberry preserves
  • confectioners’ sugar for dusting
