  • 1 cup cherries (about 150 g or 5 1/2 oz)
  • 1 clementine or tangerine (about 60 g or 2 oz)
  • 50 g (1/4 cup) granulated white sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon sea salt
  • 1 vanilla bean
  • 55 g (1/2 cup) glutinous rice flour (sometimes called sweet rice flour)
  • 40 g (1/3 cup) coconut flour
  • 40 g (1/3 cup) almond meal (or flour)
  • 40 g (1/3 cup) rolled oats (certified gluten free if that is a concern)
  • 40 g (1/3 cup) chopped hazelnuts
  • 30 g (1/4 cup) shelled pistachio nuts
  • 55 g1/4 cup turbinado sugar (sometimes called sugar in the raw)
  • 50 g (1/4 cup) dark brown sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 6 tablespoons unsalted butter, cold
  • 2 tablespoons butter for greasing ramekins
