  • 12 medium shrimp, peeled, deveined, sliced in half lengthwise, and cut in half crosswise
  • 1 cup kimchi, drained and chopped
  • 2 tablespoons canola oil
  • 4 scallions, sliced
  • 2 cups mixed leaf lettuce, torn into 2-inch pieces
