Ingredients

  • 3/4 cup whole milk
  • 1 1/2 envelopes active-dry yeast
  • 3 1/4 cups bread flour, plus more for the work surface
  • 1/2 teaspoon salt
  • 1 2/3 cups superfine sugar (or just blitz granulated sugar in a blender until finely ground but now powdery)
  • 1 whole egg, beaten
  • 1 egg yolk
  • 2/3 stick unsalted butter, at room temperature
  • 1 quart (4 cups) sunflower oil, for deep frying
  • 1 teaspoon ground cinnamon (optional)
