  • 2 boneless, skinless chicken breast halves, each 4 to 6 oz., cut into large pieces
  • 1 yellow onion, finely chopped
  • 1 green bell pepper, seeded and chopped
  • 2 celery stalks, finely chopped
  • 1 garlic clove, minced
  • 1 jalapeño chili, minced
  • 2 tomatoes, seeded and chopped
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • salt and freshly ground black pepper, to taste
  • 6 oz. smoked ham, cut into cubes
  • 1 tsp. sweet paprika
  • 1 tbs. chopped fresh thyme
  • pinch of cayenne pepper, or more, to taste
