Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons sugar
  • 1 teaspoon coarse salt
  • 1 to 2 tablespoons chopped fresh thyme
  • 1 cup (2 sticks) cold unsalted butter, cut into small pieces
  • 1/4 cup ice water
  • 1 whole chicken, 3 to 3 1/2 pounds
  • coarse salt and freshly ground black pepper
  • 6 tablespoons (3/4 stick) unsalted butter
  • 1/2 large red onion, finely chopped (about 1 cup)
  • 3 1/2 ounces shiitake mushrooms, stemmed and quartered (about 2 cups)
  • 3 carrots, cut into 1/2-inch dice (about 1 1/3 cups)
  • 1 parsnip, cut into 1/2-inch dice (about 1 cup)
  • 2 tablespoons brandy
  • 1/2 cup all-purpose flour
  • 1 1/2 cups milk
  • 3/4 cup frozen peas
  • 3/4 cup frozen pearl onions (or substitute fresh pearl onions, peeled and parboiled)
  • 2 teaspoons chopped fresh thyme
  • 1 tablespoon chopped parsley
  • pinch nutmeg (optional)
  • 1 egg, lightly beaten, for egg wash
