Ingredients

  • 2 lb. nicely marbled boneless pork shoulder, cut into 1-inch cubes
  • 1/2 small fennel bulb, trimmed, cored and cut into large chunks
  • 1 shallot, quartered
  • 3 garlic cloves
  • 1/4 lb. fresh, soft chorizo sausage, casing removed
  • 3 oz. bacon, very finely chopped
  • 2 tsp. ground cumin
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. dried thyme
  • 1 tbs. minced fresh flat-leaf parsley
  • 3/4 tsp. kosher salt, plus more, to taste
  • 1/2 tsp. freshly ground pepper, plus more, to taste
  • 6 crusty rolls, split and lightly toasted
  • mayonnaise for serving
  • 6 to 12 crisp lettuce leaves
  • 6 tomato slices
