  • 75 grams (about 1/3 cup) superfine sugar (and really, use the superfine)
  • 1 ounce (2 tablespoons) unsalted butter or shortening
  • 1 large egg, at room temperature
  • 1/2 cup milk, scalded and divided
  • 2 tablespoons plain yogurt
  • 1 teaspoon vanilla extract
  • vegetable oil for frying
