  • 1 /2 cup buckwheat flour
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 3/4 tsp xanthan gum
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1-1/4 cup milk or dairy free milk alternative (soy, almond or hemp)
  • additional cinnamon and sugar for sprinkling on top
  • 1 tsp vanilla
  • 1 tbsp turbinado sugar mixed with 1/4 tsp cinnamon for topping
