Ingredients

  • 2 onions, chopped
  • 1 fennel bulb, stalks discarded, bulb halved, cored, and cut into 1-inch pieces
  • 8 garlic cloves, minced
  • 1 ½ teaspoons herbes de provence
  • 1 pound carrots, cut in 1” chunks
  • ⅓ cup flour
  • 1 cup white wine
  • 3 cups low-sodium chicken broth
  • 8 ounces (11⁄4 cups) dried cannellini beans, picked over, rinsed, and salt-soaked (soaked overnight in salted water)
  • 2 bay leaves
  • 1⁄4 cup minced fresh parsley
  • 1 tablespoon lemon juice, plus extra as needed
