  • coarse salt and freshly ground black pepper
  • 12 to 16 ounces whole-milk ricotta cheese
  • 6 ounces feta cheese, crumbled
  • 1/4 cup freshly grated parmesan cheese
  • 3 large eggs
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 package 12-by-17-inch sheets phyllo, such as apollo #4
