  • 2 cups chopped long green chilies, such as anaheim or hungarian wax
  • 2 cups distilled white vinegar
  • 1 teaspoon sea salt
  • 2 cups all-purpose flour
  • ¼ cup kosher salt
  • ¼ cup freshly ground black pepper
  • 6 cups neutral oil, such as grapeseed or canola
  • coarse sea salt
  • 4 sprigs fresh curry leaves
