  • 1 tablespoon freshly grated lemon zest
  • 1 tablespoon freshly grated orange zest
  • 1/2 cup candied orange and lemon rind, optional
  • 1 cup dried cranberries
  • 2 tablespoons dark rum
  • 1 teaspoon pure vanilla extract
  • 2 sticks unsalted butter, softened, plus extra for the pans
  • 1 cup sugar
  • 4 large eggs
  • 2 large egg yolks (whites reserved for glaze)
