  • 2 tablespoons mayonnaise

  • 1 teaspoon finely grated lemon zest (from about 1 medium lemon)
  • 1 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon old bay seasoning
  • 1/4 teaspoon hot sauce, such as tabasco (or make your own)
  • 6 large eggs
  • 4 teaspoons whole milk
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons unsalted butter (1/4 stick)
  • 1/4 medium avocado, cut into 4 slices lengthwise
