  • 1 tablespoon cognac bourbon will do in a pinch
  • 2 cups red wine
  • 2 cups chicken stock
  • 1 bay leaf
  • 6 sprigs thyme
  • 3 tablespoons tomato paste
  • 2 tablespoons flour
  • 8 ounces button mushrooms trimmed and halved
  • 8 ounces cipollini onions or pearl onions, trimmed and peeled
  • parsley chopped for garnish
