  • 4 boneless, skinless chicken breast halves (1 1/2 to 2 pounds total), tendons removed
  • 1 teaspoon coarse salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup all-purpose flour
  • 3 matzos, finely crushed
  • 3 large eggs
  • 1/2 cup freshly grated parmigiano-reggiano cheese
  • 1 cup soy or grapeseed oil
  • 2 cups spicy tomato sauce
  • 8 ounces fresh mozzarella cheese, thinly sliced and torn into pieces
