  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground chicken
  • 1/2 cup corn kernels, fresh or frozen, if frozen do not thaw
  • salt and freshly ground white pepper
  • 2 tablespoons unsalted butter
  • 1/2 cup all-purpose flour, plus more for dusting
  • 2 teaspoons ancho chile powder or new mexico chile powder
  • 1/2 teaspoon sweet paprika
  • 1/8 teaspoon ground cumin
  • 1/4 teaspoon dried oregano
  • 1 cup water
  • 2 or 3 poblano chiles, roasted, peeled, seeded, and chopped
  • 3 ounces monterey jack cheese, shredded
  • 2 teaspoons fresh lime juice
  • 1 batch cornmeal crust dough
