  • 12 whole wheat lasagna noodles
  • 500g chicken meat from boneless, skinless breasts, cut into 1” cubes
  • ½ tsp himalayan or fine sea salt
  • ½ tsp freshly cracked black pepper
  • 1 small onion, chopped
  • 3 cloves garlic, finely chopped
  • 350g 1% fat cottage cheese
  • 150g light cream cheese
  • 75g parmesan cheese, grated
  • 1 cup buttermilk
  • 1 tbsp grain mustard
  • 2 tbsp fresh basil, chopped
  • ¼ cup fresh parsley, chopped
  • 1 can artichoke hearts, drained and cut into bite size pieces
  • 1 can sliced water chestnuts, drained and coarsely chopped
  • 75g cup sun-dried tomatoes, chopped
  • 225g light mozzarella, grated
