  • 2 3/4 cups all-purpose flour, sifted, plus more for kneading
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon cardamom
  • pinch of ground cloves
  • 1/2 cup (1 stick) unsalted butter, at room temperature, plus more for the pan
  • 1/2 cup sugar
  • 1/4 cup light brown sugar
  • 1/2 cup finely chopped candied ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cloves
  • 2 tablespoons maple syrup
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1 1/2 cups confectioners’ sugar
  • 3 tablespoons heavy cream
  • a dash of cinnamon, cardamom, and cloves
