Ingredients

  • a little vegetable oil
  • 2 fresh green jalapeno or serrano chilies, seeded and finely chopped
  • 2 garlic cloves, finely chopped
  • 1/2 bunch fresh cilantro, coarsely chopped
  • 1/2 tsp crushed red chilies
  • naan or pita bread, cut into triangular pieces and toasted, to serve
  • 1 small onion, finely chopped
  • 1 ripe mango, peeled and finely diced
  • 8 oz (225 g) mixed mung bean sprouts and alfalfa sprouts, rinsed and drained
  • 2 fresh red chilies, seeded and finely diced
  • 1 orange
  • 1/2 tsp ground cumin
  • 1 apple, cored
  • 1 tbsp brown sugar
  • 1 pomegranate
  • 2 tbsp tamarind pulp
  • 3 scallions (green onions), finely sliced
  • salt and freshly ground black pepper
