Breakfast Sandwich


  • 1 light english muffin (such as thomas light english muffins with around 100 calories and at least 3 grams of fiber)
  • 2 pieces center cut bacon (this is the leanest cut of bacon), or 1 morning star vegan sausage patty (microwaved according to package directions)
  • 1/4 cup egg substitute or 3 egg whites
  • 1 slice swiss cheese, or 1 slice of light cheddar cheese (around 80 calories a slice)
  • salt and pepper to taste
