  • 1 small onion, finely chopped (about 3/4 cup)
  • 1 medium stalk celery, diced medium (about 1 cup)
  • 6 medium cloves garlic, minced (about 2 tablespoons)
  • 1/4 cup tomato paste
  • 3/4 cup ruby port
  • 1 1/2 cups dry red wine
  • 1/2 cup homemade or store-bought low-sodium chicken broth
  • 2 bay leaves
  • 3 sprigs thyme
