  • 4 teaspoons cornstarch
  • 1/2 cup cold milk
  • 1 1/2 cups scalded milk
  • 4 eggs, separated
  • 1 1/2 ounces semisweet chocolate, melted
  • 2 teaspoons vanilla extract
  • 1 envelope gelatin
  • 1/4 cup cold water
  • 1 tablespoon dark rum
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 2 cups heavy cream
  • 8 ounces bittersweet or semisweet chocolate, very finely chopped
