  • all-purpose flour, for dusting
  • pate brisee (pie dough)
  • 1 1/2 ounces semisweet chocolate, coarsely chopped
  • 1/4 cup cold water
  • 1 envelope gelatin
  • 4 large eggs, separated
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 2 cups milk
  • 2 teaspoons pure vanilla extract
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon dark rum
  • 1 cup heavy cream
  • 1/4 cup chocolate shavings, for decorating
