  • 3 pounds boneless beef chuck roast, trimmed of fat and cut into 1 1/2 inch cubes
  • 1 to 2 limes
  • 2 medium onions, 1 quartered and 1 diced
  • 1 jalapeno, seeded and diced (optional)
  • 9 cloves garlic, 6 smashed and peeled, and 3 minced, divided
  • 1/4 cup cilantro, cleaned and chopped
  • 15 sprigs thyme
  • salt and pepper to taste
  • 2 dried ancho chile peppers
  • queso fresco (mexican cheese) or feta cheese, crumbled, to garnish
  • salt
  • cilantro leaves, cleaned and picked, to garnish
  • 2 tablespoons olive oil
  • sour cream, to garnish
  • 1 (15 ounce) can tomato sauce
  • diced tomatoes, to garnish
  • 3 dried chipotle peppers, finely ground
  • lime wedges, to garnish
  • 12 (6-inch) corn tortillas, or more, if desired
  • vegetable oil spray or 2 tablespoons vegetable oil
  • 6 avocadoes
