  • 2-3 beef shanks, room temperature (approximately 1.5 pounds)
  • 1 tablespoon extra-virgin olive oil
  • 1 cup onions, chopped
  • 3 cloves garlic, minced
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup parsnips, chopped
  • 1 cup turnips, chopped
  • 1 can fire-roasted tomatoes, including juice
  • 2 bay leaves
  • 2-3 sprigs of fresh thyme
  • 2 cups water
  • salt/pepper
  • parsley for garnish
  • 4 cups yukon gold potatoes, chunked
  • 2 cloves garlic, whole
  • 4 tablespoons unsalted butter
  • 2 tablespoons horseradish, optional (more or less to your liking)
  • ½-cup whole milk, more if needed
  • salt/pepper
