  • 2 potatoes, peeled and cubed into 1 inch pieces
  • 2 stalks celery, sliced
  • 2 carrots, peeled and sliced
  • 1 large onion, chopped into cubes
  • 2 garlic cloves, minced
  • 1 1/2 tsp kosher salt
  • 1 15 oz can unsalted diced tomatoes
