  • 1/4 cup light olive oil
  • 1 tablespoon bourbon vanilla extract
  • ener-g egg replacer for 2 eggs mixed with 1/4 cup warm water till frothy or use 2 organic free-range eggs
  • 1/4 teaspoon lemon juice or mild rice vinegar
  • 1 cup sorghum flour
  • 1/2 cup potato starch (not potato flour!) or tapioca starch
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1 1/2 teaspoons xanthan gum
