  • 1 cup packed organic light brown sugar
  • 1/4 cup organic cane sugar
  • pinch of nutmeg
  • 1/2 cup light olive oil
  • 1 cup banana puree
  • 1/3 cup coconut milk or other non-dairy milk
  • 1 tablespoon ener-g egg replacer whisked with 1/4 cup warm water
  • 2 teaspoons bourbon vanilla extract
  • 1/4 teaspoon lemon juice or light tasting vinegar
  • 1 tablespoon honey or organic raw agave nectar
