Ingredients

  • 18 eggs
  • 1 t olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 small jar of sun dried tomatoes, drained and chopped
  • 3 15 oz. jars of artichoke hearts in water, drained and chopped
  • 1/2 cup italian parsley, chopped
  • salt and pepper, to taste
  • 1 1/2 cups crumbled feta cheese (i used athenos basil and tomato feta)
