Ingredients

  • 1 head garlic, top sliced off
  • 3 t olive oil, divided
  • 2 pork tenderloins (about 1 to 1 1/2 pound each) trimmed of excess fat
  • salt and pepper, to taste
  • 1 t fresh rosemary, chopped
  • 1 t fresh thyme leaves, chopped
  • 12 1/4-inch thick slices bacon
  • 12 fresh sage leaves, chopped
  • 2 c fresh lemon juice
  • 2 c sugar
  • 1 t lemon zest
  • 5 large sweet potatoes, peeled and cut into 1/2-inch dice
  • 2 t olive oil
  • salt and pepper, to taste
