  • 6 medium tart apples, such as granny smith, peeled, cored, and cut into 1/2-inch pieces
  • 2 tablespoons unsalted butter, melted
  • 1 cup firmly packed light-brown sugar
  • 2 tablespoons cornstarch
  • 2 teaspoons ground cinnamon
  • pinch of coarse salt
  • 2 cups shredded white cheddar cheese (about 8 ounces)
  • 1 tablespoon plus 2 teaspoons chopped fresh rosemary
